1½ cups cooked sweet corn kernels (canned, frozen or fresh)
1 cup grape tomatoes, chopped or sliced into quarters
¼ cup red onion, chopped
½ cup feta cheese, crumbled
¼ cup fresh basil, roughly chopped
2 Tbsp. extra virgin olive oil
1 Tbsp. red wine vinegar
Salt and pepper to taste
1. In a medium bowl, add the sweet corn, grape tomatoes, red onion, feta cheese and basil.
2. Add extra virgin olive oil and red wine vinegar.
3. Toss to fully combine. Season with sea salt and cracked black pepper to taste.
